weekend update/new books!

so our snowy weekend turned out to be nothing more than rain and light snow flurries. Although it did coat trees and cars it didn't stick enough to coat the ground but I still got some cool pics of the trees outside our apartment.

I didn't do a thing Saturday I watched some bad television, napped, and played the wii that was it.

Sunday we missed church because we were lazy so we did housework and headed over to Borders to pick up some new books and just browse around. I picked up two new books one cooking and one just to read.
I picked up this just for reading and enjoying. It was recommended to me and I can't wait to dive into it.

and this because it looked fun and in looking through this book I want to try every single recipe she uses. A woman after my own heart she loves to bakes but loves the convenience of a box mix.

I'll be sure and let you know the first time I use a recipe out of this book and how it turns out. I'll also probably try to do a brief review of "The Shack" when I'm finished with it as well.

I cooked my first of my ten meals for the next two weeks. It was pork tenderloin and twice baked potatoes. It sure wasn't pretty since my potatoes kept tearing as I was scooping them but it was good.

Tonight is my second meal

Chicken fajita quesadillas and I'm excited.

This is a busy week lots of meetings and such so it will be a challenge to not just want to grab fast food but I am committed to cooking every night.

the script is uneven and weird but I think I just need practice it was honestly better than I expected it to be.

my rose cake first attempt. For the record I hate the Wilton rose it is difficult and when I tried to transfer them to my cake from the wax paper I formed them on they got all smooshed, but my co-workers didn't care they ate it anyway and I got compliments that I don't think I deserved. This cake gave me fits from the initial icing and honestly I'm just glad to have finished it without throwing it away.


And some cuteness I was sick last weekend and had my Missy girl right by my side I think she knows when I don't feel well. Anyway the Mr.snapped this pic and neither me or Missy wanted our picture taken. I thought this was adorable.

Grocery Shopping Update/weekend planning

first off the grocery store was a mad house last night crazy busy. I guess everyone in our state had the exact same idea since it's supposed to monster snow here by early evening. What? Snow? at the end of March? Welcome to Oklahoma my friends!

So anyway here's the final run down of grocery items and their cost

I was supposed to go out with the girls tonight but we have decided to reschedule
with the weather being so unpredictable. I am sad about this :(

Saturday I have been putting off getting some bloodwork done for a while because well I am a big baby and hate getting blood taken with a passion but it needs to be done so I'm going to try to get it done in the morning. The lab is open until 11.
After that just housework and I plan on making a cake to practice more on those silly roses that I'm still having trouble with and finishing up cleaning out our spare bedroom.

Cooking/Grocery Challenge to Myself

I am bad very bad at sticking to a grocery budget. There are times I really love to cook and times I can't stand the thought but I love baking and this is where my grocery budget goes haywire.

I have made a challenge to myself for the end of this month and into April. Mine and Jeremy's grocery budget is 75.00 every 2 weeks now keep in mind there's only 2 of us and we live in a low cost of living state so that should be more than enough. Well the entire month of march I went over. So I have challenged myself to come up with a real meal plan like 2 weeks worth of meals and buy all the ingredients at once and not go over budget. This also means I don't get to do a lot of baking :(

Now obviously we do eat out sometimes and I am accounting for that I have a friends birthday dinner and Jeremy and I usually eat out about once per week. So I took that into consideration and then proceeded to plan 10 meals for the next two weeks. This means I must cook after work I have been being really lazy and not wanting to and eating crap because of it which is not good for my migraines or my sleeping issues. I'm trying a lot of new recipes too so we'll see how it goes.

So here are my 10 meals.

pulled pork sandwiches
bbq chicken
penne with turkey sausage and peppers
chicken quesadillas
meatloaf with carrots

My wardrobe overhaul

Have you ever felt that your wardrobe didn't quite express who you were? Well I've been feeling this way for a while and I finally decided to do something about it.

So beginning next month I am going to be completely re-doing my wardrobe piece by piece starting with a little black dress I can wear for all occasions and working my way forward. I'm following Nina Garcia's book "The Little Black Book of Style" and she says to edit your wardrobe to fit who you are not the other way around. So I've been having some things tailored to fit better and throwing out things that I don't believe fit my style. The result of this is fewer choices and clothing options but the stuff that is there fits me great looks great on and reflects my style.

I'm having a little trouble deciding what my style is I'm almost 24, married, work a an 8-5 job, and love to keep an organized home. When at home I'm usually in jeans, my pink zip up fleece, or a fitted t-shirt if it's warm outside. I like to look polished but not too stuffy. I love me a great pair of heels and feel like there's no feeling in the world that can compare to when you know you're rocking an awesome pair of stilletos. I have red hair, green eyes and I'm 5'5 when not wearing 3 inch heels. I love wearing classic pieces in bright unexpected colors, or wearing a really neutral peice with bright jewelry. So the more I think about what I like to wear the more I'm getting the classic style with pops of color vibe.

However, this may be what I'd like my style to be but I don't believe that's what it actually is portraying right now. I wear a lot of drab colors that do nothing for me and love when I actually get to wear a bright color. Kelly green happens to be my favorite color to wear.

So I have been getting rid of things that don't fit in my closet and trying to really hard to part with my massive collection of t-shirts, having been a college athlete, sorority girl, and volunteer organization chair I have enough t-shirts to clothe a small country. :)

Anyway I'll be purchasing my dress in the upcoming weeks and trying to post about each purchase as I make it.

Monday: Weekly Goals and Plans

Well it's Monday and to say the least my weekend was way too short. I didn't sleep Friday night so I spent saturday laying around doing nothing when I should've been doing housework and icing cakes. As a result I wound up icing my cake for class that morning and it turned out awful. I'm not even finished with it but it's starting to turn around and I hope by the time I finish it I will be happy with it.

Anyway on to weekly goals.

I've got to get our 2nd bedroom cleaned up it looks right now as if a bomb went off in there and I need to take care of that ASAP.

I also need to clean out my fridge and do some meal planning.

That's about it for what has to get accomplished this week

But some other things I'd like to do time permitting is organize my Relay materials and do some serious dusting. However I'm not going to be upset if I don't get these two things done. I'm learning more and more to let go of my perfectionist tendencies.

My week isn't very busy in fact it's quite relaxed so I plan on baking something later during the week not sure what.

This is a perfect week to try out some new recipes and I really am trying to be more adventurous in my cooking.

Dentist Update and weekend planning

Ok so my dentist appointment went absoulutey fantastic my new dentist is so nice and he told me we didn't have to do anything scary like my old dentist said we would. He was funny and made me relax it was a great appointment!

I don't have a lot planned for this weekend I've got to ice 2 cakes one for class and one for someone's birthday but that's it shouldn't take me too long.

We do have to go the laundro-mat which I hate but it gets everything done so quick.
I still just cannot wait for the day when we have a washer and dryer of our own.

Other than that I plan on it being a lazy weekend a little housework here and there and of course class on Sunday but that's about it. I am excited about a weekend off.

In other news today is mine and Jeremy's 1 year 6 month anniversary and I got in my car this morning turned on the radio and they were playing our first dance song "Everything" by Michael Buble every time I hear that song it makes me smile. It's Friday and the first official day of spring and to top it off March Madness started yesterday!!

Nervous Thursday

I have to go to the dentist today :O

I hate going to the dentist it makes me so ridiculously nervous. I don't know why I take good care of my teeth but they just fall apart they're very brittle I think part of it is genetics and my mouth is so sensitive I hate getting cleanings and things done because my mouth is always so sore afterwards.

However, I have been putting off this appointment for quite some time and it's time for me to put my big girl pants on and deal with it.

Tired Tuesday

Insomina rears it's ugly head again although I did sleep it was fitful and only about 3 hours total so I am exhausted today but, I am trying really hard not to show it.

Tonight my plans are
make dinner (something with ground turkey no idea what yet)
sweep and mop kitchen floor
put away clean dishes and re-load dishwasher
and lastly
bake some cupcakes.

That's about it the plan was to have cupcakes for today but that's a whole other story.

Thanks for all your thoughts and prayers on my blog yesterday they are much appreciated and right now battling this insomnia I feel like I could use all the prayers I can get. I know deep in my heart God wouldn't give me anything I can't handle but right now I don't feel like I am handling it very well :( I find myself upset because I don't feel like my loved ones and friends should have to deal with me this way, and it's hard for me to accept that I'm not at 100% like I am used to being and something that before didn't take any energy at all now might take every ounce of energy I have and I HATE IT!!!

Anyway I don't mean to be a downer. So I'll leave room at the end of this post for pics of my clown cake once I get home tonight (sorry I didn't get them up yesterday)

This cake was surprisingly easy to create I found it much easier to ice the cake smooth on my second go round after gathering tips on how to do it from multiple sources. The clowns were so easy I almost felt guilty at how easy they were to pipe on to my cake. The one with his arms folded it looks like his arms are too long for his body but hey I just started it'll get better.

It is a strawberry cake with whipped cream and fresh strawberries for filling I took it to a ladies Bible study group my mom goes too and she brought me back one piece for Jeremy and that was it so I guess they liked it..

less is often more

It is with a heavy heart that I write this post and make this very hard decision.

Since I was 18 years old I have been involved with Relay For Life and this year more than any it's been a huge part of my life and I love it but I've decided I kind of let it take over my life more than I'd like. Often times this year I've spent every night of the week working on something for Relay and it's taken a lot out of me and been quite stressful and hard on not only me but my husband, and my apartments cleanliness level has suffered and my dog probably feels neglected.

After suffering from insomnia for nearly 6 months and being prescribed a high dose sleeping pill and it not helping me at all my doctor is recommending I see a counselor. The thing is I know what the counselor is going to say to me they are going to say that I am so stressed that my mind won't shut off at night and I keep replaying in my head what I have to do the next day even if I write down a list.

Well this past week I was brought to a breaking point after not getting even ten minutes of sleep Tuesday night and waking up at 3AM to clean my oven cause well what else was I going to do at 3AM. I decided that day to go to work no matter what. Exhausted and tired I dropped my husband off at his job and started towards the interstate to get to mine I was thinking about how this insomnia has infected my life and been like a poison to my heart.

I found myself blaming God and wondering why this was happening to me as young as I am. At this thought I burst into tears and could not stop sobbing I tried to put on a brave face when I headed into my office but while getting coffee in the breakroom because I needed it so badly I just let the tears fall my boss was great comforting me and telling me I wasn't un-professional even though I was sitting in her office crying my eyes out. It was after this unlovely moment in my life I realized I had to make a change.

So it's after much prayerful thought and consideration that I have decided once this Relay season is over in June I am going to take a year off from Relay. It's just a year and I realize that once it's over I can return but maybe with a better perspective on what I can and cannot do. I often take on too much at once feeling invincible and like I can do it all. I need to learn to limit myself and not let any one thing take over my entire existence which I feel this year I've let Relay do.

So after Relay season my only commitments will be Wilton classes (I do have pics of my clown cake from class yesterday but I haven't uploaded them yet), and piano and I think I'll keep it that way for awhile.

I did get almost everything done last week I didn't get my fundraiser cake made because well I had a melt down instead, but I did get Jeremy's basketball cake made for his boys night and all the rest of the food I know the boys appreciated it and I heard that they all enjoyed it. I didn't get pics of the basketball cake because it got eaten and not by people by my very dumb dog it got left out and so did she on Saturday and she helped herself.

I have plans this week to

make some cupcakes for friends
make my neices b-day cake (I haven't decided on a theme yet)
switch out my St. Patricks day decor for generic spring stuff
practice making roses for Wilton class because right now I'm terrible (I'm thinking I might put roses on the cupcakes for friends just so they don't go to waste)
laundry day on Saturday
and of course making my cake for class and this week is my final cake for course 1 I can't believe it's already over and I can't wait to start course 2.

It is spring break here so most of my Relay committee is out of town and I'm going to take the opportunity besides making a presentation tonight to focus my energies on something besides Relay for awhile.

Don't get my wrong I love volunteering I just feel like the present place I am in my life I need to take more time to spend on growing in my faith, my husband, and keeping my home organized, because when things are right at home things go better in my life over all.

It's just a year I keep telling myself that. This is going to be hard but I really do believe beneficial in the end.

On my mind

I have something I have debated about blogging about since Saturday evening because it can be a touchy subject and well I've decided I'm just going to do it. Here goes I guess this is truly why we all write blogs so we can write about our feelings.

I feel like my generation of women has lost all sense of etiquette (ok not all of them but a lot of them). Jeremy and I attended that lovely banquet saturday night we sat with two of the board council members and the community director but there were some empty chairs directly to our right. Chairs that were supposed to have been filled with two women from Jeremy's company. Well they showed up about an hour late everyone at our table was finished with dessert and those that drink it were enjoying coffee, and the awards ceremony was nearly over.

They still walked in wearing sparkly flip flops with their cute black dresses, I wish that wearing flip flops no matter how sparkly was outlawed at cocktail attire events there's not much worse than wearing an adorable dress and flip flops if you must wear flats please be sure they are closed toe or cute sandals but NOT flip flops.

But that's not the worse of these two women's behavior. They walked in late proceeded to ask for things to be passed around the table making noise, and nibbling on food, and then and then and my friends this where I really very nearly lost it got out their cell phones and began texting their friends. They didn't stay for the public forum discussion afterwards even though the nice people putting on the awards held seats for those of us that attended up close to the speaker.

These women looked to be in their early 20's and some may say it's just the generation but my husband and I who are 26 and 23 respectively arrived 10 minutes early, turned off both of our cell phones upon arrival, and had light but engaging conversation with board members seated at our table. As you can tell from the picture above we wore cocktail attire which for me included heels, and nice jewelry, and for my husband it included a suit and tie. I will admit I did take his jacket from him and drape it around my shoulders as it was chilly in banquet hall which is not something I would normally do but what's a girl to do deal with goosebumps or try to do something about it?

I went to finishing school for two summers I learned all about how to eat properly, when to arrive, when to leave, how to support light conversation with meaninful additions, formal place settings, introducing myself to new people, and also what to wear to events such as these and I can tell you friends flip flops has never been on the list of acceptable attire. I have dined with governor and charmed my way through several pageant judges in my day. In my sorority also we were given etiquette training and also required to dress up at least one day a week for classes I tried to dress up at least 3 myself. I work in a casual environment yet almost everyday except for Friday you will still see me in nice heels and dress pants.

It could be that I am southern in roots or that I'm just plain old fashion. But I believe these are important values that are being lost on our generation due in large part to the technological advances and the fact that we can e-mail our friends on our phone from anywhere. I have a blackberry curve and I love it whenever I'm sitting in a doctor's office by myself I text a friend, I can be constantly in communication with my Relay committee without interrupting my work flow on my company computer and much more. However I would never be talking on it when someone's trying to help me at the bank, a restaurant or a grocery store check out and I would NEVER pull it out at a semi-formal awards ceremony in which people are being honored for their great accomplishments and start texting my friends. It's just not polite.

I think every woman should know how to command a room when it's called for but I also believe we should all know how to behave like ladies in situations such as these. Don't get me wrong I love football and wearing sweats just as much as the next girl but I also know when the situation calls for it I have the training to conduct myself like a lady.

I hope when we have children that my husband and I can instill in them the value of good manners and learning etiquette it's not always fun but it's always correct.

I found these particular women at this event to represent my husband's company very poorly and I felt bad for my husband knowing how hard we both worked to make a good impression for the very reason that everyone at the table knew who he has representing.

So in short I really hope our generation catches up on the manners game and if not we can at least teach it to our children.

weekend re-cap, Monday Goals and plans

Saturday night Jeremy and I attended the Oklahoma Humanities Awards Banquet, and got to stay to hear Dr. Mary Frances Berry lead a public forum on race and gender's roles in politics and our changing country. It was very interesting and insightful and I am glad we got to attend even though I didn't feel very well. Here's a pic it was fun getting all dressed up.

and I completed my first cake for class on Sunday I think it turned out Ok for my first cake I know I could do a better job getting the icing smooth but I was sick on Friday and wound up making this cake late Saturday when I finally sort of felt better and I didn't take my time. Next time I will take extra care icing the cake itself. The decorating part was suprisingly easy for me to do and I am excited to continue on in classes.

My weekend was quite short thanks to the time change and being sick but what can ya do?

find a dentist to see about my front tooth (it is very sore and tender)

steam all dress clothes that have been laundered

go to bed by ten each night, this is especially difficult after the time change.

stick to schedule for week if not I'll never get everything done.

Monday Night:

Relay For Life Committee meeting and I need to remember to take cards and the diaper cake I made for my committee member who just had a baby
when I get home I've got at least 2 cakes to bake

Wednesday Night:
Dinner at church
finish baking if not done
make icing for boys night and fundraiser cakes and ice cakes

Thursday Night:
Survivor Dinner for Relay For Life
when I get home make fruit dip, and queso for boys poker night

Friday Night:
throw wings in oven and once finished take to boys night
make icing and ice cake for class

Thank you ladies for your comments last night I won't give up blogging just yet.
I had 4 questions asked so here are the answers:


Mrs. S Asks: If I could travel anywhere in the world where would it be?
Without a doubt Italy I'd love to visit the beginnings of our culture and all the beautiful architecture in Rome and Italian is such a beautiful language I could sit around all day and listen to people speak it and be mesmerized.

Chelsie asks: How did you and your hubby meet?
Our meeting was totally fate I tell you. After I came home to take care of my mom from college I fell into a deep depression merely existing, going to work and coming home. I finally broke down sobbing and realized I needed God in my life in the worst way possible.

I had remembered passing this little church a few times on my way home from work and decided once I finally got a Sunday off I was going to go. Well that Sunday off came the very next week so I very bravely dressed for church drove down there, sat in my car for few minutes, took a deep breath opened the door got out of my car and shut the door and started walking towards the church. Suddenly I had an overwhelming sense of dread and started digging in my purse to get my keys to get back in my car and leave I frantically searched for about 5 minutes turned around and there were my keys sitting in the floor board of my car.

They had fallen out of my purse. I was forced to attend the service so afterwards I could ask someone to help me unlock my car. So I attended service and some of the nice gentlemen helped me unlock my car. I enjoyed the service so much I came back that night and met my now husband. I thought he was cute but he didn't talk to me over the next few months we talked and he'd ask me if I was going to be there on Christmas day I said yes but wasn't there apparently he'd worn a suit just for me :) Our relationship started out of him teasing me about not being at church on Christmas. We had our first date January 20, 2006 and were married 1 year and 10 months later to the day.

Chelsie also asks: What are my organization secret weapons?
To be honest I don't consider myself that organized and often find myself without something I need. But a few things I have learned over the years is that mornings are invaluable if you can get at least one big task for your day done before 8AM you're on your way to a great day. I carry a day planner and am meticulous about planning out my days down to the 30 minute increments. (this has been known to drive my husband batty) at the beginning of the day I sit down and identify the three most important tasks I need to accomplish and then if I get those things done I don't beat myself up if I don't get everything else done. Also in order to keep my home looking nice I usually try to do my chores as soon as I walk in the door after changing out of my work clothes. I try not to sit down and relax until it's all done or at least a large majority of it is. and I always make sure I make time to do the things I want to do not just the chores. Be wary of time wasters such as the internet and TV I set aside 30 minutes during the day and 1 hour at night for internet and TV time. That does not mean my TV is not on while I'm doing other things but in general I usually try not set in front of the TV too long if I do forget it my plans are out the window for the day.

my husbands asks: can I please read your blog? Yes honey you can just know that because you're actually a writer I get nervous when you read wondering if you think my writing is terrible or what you'll just have to get over that!

Whats going on in my mind Wednesday

Do you ever feel like God's preparing you for something big in life but you have no idea what.
This is how I have felt for awhile now. I'm not sure what God's doing in my heart or what he's preparing me for but I just feel it in my soul that something is going to happen soon and it's going to be huge.

I want to be ready I do but it feels like such random events are occurring and random thoughts are popping into my head and I find myself stopping and saying to myself... "now that was odd"

There are days I want to just dig my heels and resist all the change occurring not only around me but in my heart but I know that wouldn't be wise. Whatever God has planned for me I know that it's His will and I shouldn't resist but it is hard to say ok God take me, change me, use my life in anyway you want.

Do you ever struggle with the changes God puts you through. If so what's your advice for getting through it?

So far I only have 3 questions and one of those is from my silly hubby. That makes me think maybe my blog isn't worth keeping up if no one is reading after all the point of a blog is to reach scopes of people you never would have had access to otherwise right. All of my blogger friends have tons of readers and comments and it makes me wonder whats wrong with me that I don't have more readers? So what's up please tell me?

Cake Decorating Class

Sunday was my first Wilton's Cake Decorating class and it was awesome I got so much good information just from the first class I am so excited to go back and learn more next week.

We didn't actually get to work on any cakes this week but next week we have to have a cake base iced and ready to go for decorating when we get to class.

I purchased a few supplies including two new 8 inch round baking pans I can't wait to try out on my cake on Saturday.
